Emulsifiers for liquid margarine

    Liquid frying margarine appeals to consumers because it's easy to use and, with its high content of polyunsaturated fatty acids, has a healthier profile than traditional frying margarine. And its superior frying performance make it a great alternative to liquid oil, too. Liquid margarine is also used in industrial food production.

    Because it's used in so many different ways, there are plenty of demands placed on its performance - and that presents challenges for margarine manufacturers.

    To achieve a stable liquid margarine, we use emulsifiers such as Palsgaard® 3245 or Palsgaard® 3237, which provide stability in the emulsion whilst reducing splattering in the final product. Oil absorbers such as Palsgaard® 6111 or Palsgaard® 6118 create the crystal network, giving the oil-absorbing effect that will prevent oiling out and improve the viscosity of the liquid margarine. These combinations allow the product to be stored at both room temperature and refrigerated temperatures.
