Liquid frying margarine is easy to use and convenient, whilst appealing to the modern-day consumer as it has a healthier profile due to its high content of polyunsaturated fatty acids, and is a better alternative to liquid oil due to its superior frying performance.
Consumers use liquid margarine for both frying and as a substitute for liquid oil in various bakery applications. Liquid margarine is also often used in industrial food production. This places a whole host of demands on the product

To provide a stable liquid margarine we use a combination of emulsifiers and oil absorbers. Emulsifiers such as Palsgaard® 3245 or Palsgaard® 3237 provide stability in the emulsion whilst reducing splattering in the final product. Oil absorbers such as Palsgaard® 6111 or Palsgaard® 6118 create the crystal network, giving the oil-absorbing effect that will prevent oiling out and improve the viscosity of the liquid margarine. These combinations allow the product to be stored at both room temperature and refrigerated temperatures.
