Palsgaard offers a wide range of stabilizing solutions for ketchup.

Whether you are looking to create a ketchup with high or low tomato paste content, we can help you find the right combination of stabilizers and help you to create new products or adjust existing recipes in our pilot plant.

Ketchup with high tomato paste content requires stabilizers to thicken the water in the product and for the homogenous suspension of the herbs. At a lower tomato paste content, the influence of the stabilizers on the quality of the final product is even greater.

For ketchup we suggest Palsgaard® 5232, Palsgaard® 5304, or Palsgaard® 5308, all blends of various gums. These products are often used as starting points when helping customers create new recipes or adjust existing formulations.

Palsgaard stabilizer solutions for ketchup with types of paste other than tomato are also available.
